Buttermilk Baked Chicken – Recipe Compliments of Scrambles Restaurant, Ocala

(serves 4)

2 cups Buttermilk

Juice from ½ lemon

1 Tbsp. Hot Sauce

½ Yellow onion, sliced

5 sprigs of fresh Thyme

3 cloves garlic, crushed

Salt & Pepper

4 skinless, boneless Chicken breasts, 6 oz each

2 cups Corn flake crumbs

¾ cup Parmesan Cheese

Mix together in a large bowl all ingredients except chicken, corn flakes and Parmesan cheese.  Add chicken and coat with mixture.  Cover bowl with plastic wrap and refrigerate for 3 hours, or up to 12 hours. Place Corn flake crumbs and Parmesan cheese in a small baking pan and dredge each chicken piece, pressing to help adhere. Place on wire rack over baking sheet and bake in a 400 degree preheated oven for 30 minutes.

Cooks note: Soaking chicken in buttermilk leaves the chicken incredibly moist with a delicious flavor.
