Gale Walderin, owner of Bay Lake Blueberry Farm, the only certified u-pick organic blueberry farm in Marion County, has sent us a very berry recipe for blueberry ice cream. If you’re picking blueberries over the next few weeks (they’re ripe right now!!), try this one out. Your family will thank you, since it’s healthy AND delicious.
Ingredients:
2 cups milk
1 1/4 cups of sugar (organic)
1/2 teaspoon salt
2 cups half and half
1 tablespoon vanilla extract
4 cups whipping cream
1 1/2 cup blueberries cooked with 1/4 cup of sugar and 1 1/2 cups of water, for about 45 min or longer on med high, until the berries make a gravy type consistency.
Mash the blueberries after they cook, then add them to the ice cream mixture. Then turn on the ice cream maker and keep layering the ice and rock salt around the outside of the canister until the ice cream is creamy and fluffy, about 35 to 45 minutes.
Note: If the ice cream maker stops before the 35 minutes, then you may have to add a little water around the outside of canister, because sometimes the ice and rock freeze in to big chunks, which will bind up the ice cream maker.
Makes 4 quarts
