
Like most chefs, Rondo Fernandez of Mojo’s Grill developed his passion for cooking while growing up at home and learning the basics from family members. In his case, his Cuban grandmother, whom he describes as “the quintessential Cuban lady,” made a memorable salsa. Here’s how to make “Nana’s Salsa.”
Nana’s Salsa
A family recipe from Palma Soriano, Cuba
3 large tomatoes, diced
1/2 Spanish red onion, diced
1/2 clove garlic, minced
1/2 jalapeno, seeded and minced
Juice of small lime
Juice of small lemon
Small bunch of fresh cilantro
Pinch of kosher salt
Pinch of Adobo seasoning
Ground black pepper to taste
Mix together all at once. Let chill for an hour or so and let flavors mingle. Then enjoy with fresh warm tortilla chips.
